Summer is full-on in Southern California and as the temperature scores highest in August. I find myself constantly on the look for recipes that will encourage my children to stay hydrated.

One of the easiest and most delicious drinks I used to have as a kid myself was watermelon juice.

My dad loved watermelons and he used to always chill them for a couple of hours before cutting and sharing them with us to beat the humid and hot Mediterranean summer days. And sometimes he used to make them a delicious cold drink for us to enjoy.

Ingredients Needed:

You will need few ingredients for this refreshing drink: one watermelon (around 7 – 8 pounds), 1/4 cup lime juice and 1 cup ice cubes.

I find lime juice elevates the freshness of this drink and balances the sweetness of the watermelon.

For this recipe I always use a seedless watermelon because it is less messy to work with. If your watermelon is seeded, make sure to remove the seeds and strain the juice before serving it.

How to Make Watermelon Juice at home

Cut your watermelon in half and use a melon-ball cutter or a big spoon to scoop chunks of the sweet watermelon flesh and place them straight in a blender. Discard the rind.

Add the lime juice and ice cubes and blend them for one to two minutes.

Serve the juice in a cold glass with ice cubes. Drink immediately.

You can save watermelon juice in the fridge for a couple of days. It is normal for the juice to separate over time; just stir it with a spoon to recombine before consuming it.

I like my glasses to be very cold, so I place them in the freezer for 15 minutes before pouring the juice in them.

What to Have with Watermelon Juice

Fresh Watermelon Juice has a great cooling-down and relaxing effect. I usually serve it with some mint leaves and a thin slice of lime which I enjoy nibbling on while drinking the juice.

Watermelon popsicles: turn any leftover juice into watermelon popsicles. Pour the juice in ice pop molds and freeze it for 2 to 3 hours.
