This is a staple, authentic Lebanese dish, part of mezze, along side tabbouleh, hummus, baba ganoush and many other crazy delicious Lebanese dishes. It is completely vegan and Keto friendly too.
Though this potato recipe needs very few ingredients, it is actually very rich in flavors.
The potatoes are so crispy and the combination of fresh cilantro and garlic with coriander and cumin makes this dish an all time favorite. Thus, it is the ultimate vegan dish that you will constantly crave.
What Ingredients to Use in Garlic Coriander Potatoes
Potatoes are the main ingredients here, I find Russet potatoes work best with this particular recipe. Other types of potatoes like Yukon Gold work too.
Fresh cilantro, garlic and whole coriander seeds will give freshness to this dish. I buy whole seeds and crush them in a mortar just before using them to get the best taste.
Ground cumin and chili flakes will add heat and depth.

You need very few simple ingredients for this recipe: potatoes, crushed garlic, chopped fresh cilantro, whole and crushed coriander seeds, cumin powder, chili flakes and olive oil.
How to Make Garlic Coriander Potatoes
Dice your potatoes into half inch cubes and deep fry in canola or vegetable oil for about 10 minutes until they cook and become golden crisp. Remove from oil and place on a kitchen paper towel to soak the extra oil.
In a skillet on low heat, cook the minced garlic for 1 minute and then add the potatoes and all the spices. Cook for 1 more minute to make sure the potatoes are coated well.
Garnish with fresh chopped cilantro and drizzle some good quality olive oil on top. Serve warm with simple green or tomato salad on the side.
If you are looking for a healthier option and want to completely avoid frying, you can put the potatoes in a baking pan, drizzle with olive oil and bake in 450F oven for 20 minutes until the potatoes become golden crisp.
In a small mixing ball, mix the garlic, all the spices and olive oil. Remove the potatoes from pan and drizzle with the mixture. Mix in fresh chopped cilantro and serve warm. This is also an excellent variation for this authentic Lebanese dish.
What to Serve Garlic Coriander Potatoes With
This dish is a great with any kind of main dish, yet you can have it as a main dish with a bowl of fresh salad.
You can also have it as a sandwich in soft pita bread with a squeeze of lemon juice.

Instructions

YUM! I made this using the Air Fryer to cook the potatoes and then tried a version using InstaPot steaming the potatoes first and then sauteing them to get crisp. Both versions turned out great. I love the spice mixture in Ghassan’s recipe. It is packed with flavor. Thank you.
