Indulge yourself in mouthwatering layers of pure goodness starting with whole wheat toast covered with a layer of soft and rich feta cheese, topped with another creamy layer of avocado, and crowned with a hard boiled egg.
Drizzle with olive oil, and sprinkle with chili flakes and fresh thyme for the extra kick.
Ingredients Needed:
You can prepare this toast in 10 minutes with the following ingredients: one whole wheat toast, boiled egg, feta cheese, avocado, olive oil and seasoning.
How to Make Avocado Toast with Feta and Egg
Start by boiling one egg for about 7–10 minutes depending on how you prefer to have eggs. While the egg is boiling, mash half an avocado and set it aside.
Toast the bread and spread 1 table spoon of good soft feta cheese over. Add the mashed avocados over the cheese then cut and place the boiled egg on top.
Sprinkle with salt, freshly ground pepper, red chili flakes and drizzle with some extra virgin olive oil.
I like to add few leaves of fresh thyme and slivers of radish to balance the texture and flavors.
What to Have with Avocado Toast
Avocado Toast with Feta and Boiled Egg is very fulfilling on its own since it is packed with proteins and healthy fats, yet I like to have some radish or cherry tomatoes with it for a nice fresh crunch!
If I am having it for a light lunch or dinner, I prefer it with a bowl of tangy green salad on the side or with a bowl of fat free Greek yogurt and cucumber.
