This Banana Bread is my wife’s favorite dessert and hence by default we never run out of bananas or banana bread in our household! You know what they say, happy wife, happy life..
The cake is so easy to make and takes literary five minutes to put together. Most importantly, I do not need to get my stand mixer out to make it. All I need is a mixing bowl and a fork!
What Bananas to Use in banana bread
The best bananas to use for any banana cake recipe are the ripe ones. The darker their skin the better. Just make sure the bananas are ripe enough so they can be easily mashed.
If your bananas are green and you still want to use them for your cake, you can easily ripen them by wrapping them unpeeled with foil and baking them at 300F for about 15 to 20 minutes. The banana skin will turn black; let them cool before scooping out the banana pulp from the peel.

This recipe calls for few ingredients: mashed bananas, vegetable oil, white granulated sugar, brown sugar, eggs, pure vanilla extract, milk, all–purpose flour, baking powder, baking soda and salt.
How to Make Banana Bread
Preheat oven to 350F (180C). Grease and flour a loaf pan.
In a mixing bowl combine the mashed bananas with oil, eggs and sugar. Add the milk and pure vanilla extract. Mix using a fork until smooth.
In a separate bowl sift together flour, baking powder, baking soda and salt. Add the dry ingredients to the banana mixture and mix until just combined.
Pour batter in the prepared pan and bake for 50 – 55 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes then turn over on cooling rack and leave to cool completely.
Slice the banana bread to the desired size and serve warm or at room temperature.
How to make banana bread very moist
To make sure the bread comes out moist all the time, I substitute butter with canola or vegetable oil and I add half a cup milk or buttermilk to the batter.

This recipe had to bake for an hour and 15min. So keep in mind when making this banana bread.
