Avocado Chicken Salad — this chicken salad recipe is easy, healthy and very nutritious. Made with lime, garlic, and fresh cilantro, this mouthwatering summer salad is packed with flavors and goodness.

This is one of my kids’ favorite dishes. I love making it for them since it is super easy and nutritious.

Perfect for a summer lunch or a Sunday BBQ because the avocados, lime, garlic and cilantro transform the simple, tender chicken breasts to a sophisticated, fresh dish.

I always use fresh, antibiotic free chicken in my cooking. Always soak the chicken with a little bit of water and white vinegar. This helps tenderise the chicken and eliminate any undesirable odor or taste when cooking it.

Ingredients Needed:

You only need a few simple ingredients to make this recipe: skinless chicken breasts, avocados, lime juice, garlic, olive oil, cilantro, onions, ginger powder and chili flakes.

How to Make Avocado Chicken Salad

Cut each chicken breast horizontally to make two even pieces, almost the same thickness. This will make the chicken cook evenly and faster.

In a bowl, mix together lime juice, minced garlic, olive oil, roughly chopped cilantro, salt, pepper and ginger powder. Marinade the chicken breasts in the mixture for at least 15 minutes.

You can marinade your chicken breasts over night in the fridge or you can freeze them for a longer period of time. This saves time while cooking and enhances the flavor.

In a large skillet on medium-high heat, cook the chicken in olive oil for 5-6 minutes on each side until they get beautiful sear marks. Remove from heat and leave them to rest for 5 minutes, then cut them into bite-size pieces or thin slices for serving.

In a bowl, add avocado cubes, sliced onions, chopped cilantro, minced garlic, lime juice and chili flakes. Season with salt and pepper and give them a light toss.

Place the salad in a serving plate; add the chicken pieces and drizzle with olive oil.

Ingredients

For the Chicken:

  • 2 chicken breasts 1.5lb (700g), skinless, boneless
  • 1/4 cup lime juice
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/3 cup cilantro, roughly chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ginger powder

For the Salad:

  • 4 avocados, cut in large cubes
  • 1/4 cup white onions, thinly sliced
  • 1/2 cup fresh cilantro
  • 1 garlic clove, minced
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/2 teaspoon chili flakes
  • salt and pepper to taste

Instructions

Cooking the chicken

  1. Cut each chicken breast horizontally to make two even pieces.

Assembling the salad

  1. In a bowl, add avocado cubes, sliced onions, chopped cilantro, minced garlic, lime juice and chili flakes. Season with salt and pepper and give them a light toss.
  2. Place the salad in a serving plate; add the chicken breasts on top and a drizzle of olive oil over.

Notes

For a BBQ or a char-filled flavor, cook the chicken breasts on a grill.
