Chicken Alfredo Pasta – creamy and cheesy pasta with peas, carrots and fresh mushrooms. This easy to make pasta recipe is delicious and packed with flavor.
This Italian pasta dish is the definition of comfort food—loaded with chicken, peas, carrots and fresh mushrooms, all cooked in a creamy Alfredo sauce and topped with a mixture of Pecorino and Mozzarella cheeses. I mean, what is not to like about all that!
Ingredients Needed:
To make this luscious pasta dish, you will need a few simple ingredients:
- Pasta of your choice (Rotini, but Rigatoni or any other shape works too)
- Chicken breast
- Carrots
- Onions
- Green pees (frozen work perfectly)
- Sweet corn (frozen work perfectly)
- Fresh white or black mushrooms
To make the sauce you will need:
- Butter
- Milk and heavy cream
- Pecorino and Mozzarella Cheese, grated
- Nutmeg, cinnamon and some seasoning
how to make chicken alfredo pasta
To make this delicious creamy chicken pasta, start by cutting your chicken into cubes, roughly an inch each. Then chop your onions, cut the carrots and wash and slice your mushrooms.
Prepare the pasta: I just follow the instructions on the back of the pasta box. Drain and set aside.
Cook chicken and vegetables: In a large pot on medium heat, add 1 tablespoon of avocado oil or any other cooking oil and fry the chicken until cooked on all sides. Add salt, pepper, nutmeg and cinnamon. Mix for a minute and remove to a plate. Save for later.
In the same pan sauté the onions and then add the carrots; cook until tender. Add the mushrooms, peas and corn. Season the vegetables with the same spices you used for the chicken. Cook the vegetables for 2 minutes only and then bring back the chicken to the pan; add the pasta and mix well.
Prepare the sauce: to make the white sauce, I melt 1 tablespoon of butter in a sauce pan and add the milk and cream together. I then sift 3 tablespoons of flour over the cream mixture, season with salt, pepper, nutmeg and cinnamon. Stir on low heat for a few minutes until sauce thickens. Remove from heat and pour over the pasta and chicken. Add the grated cheeses. Mix well and serve immediately.
what is alfredo sauce?
Alfredo sauce is similar to the French Bechamel sauce— both white and dairy based sauces. However, Alfredo is thickened by reduction over medium-low heat and finished with Parmesan cheese and spices such as, pepper and nutmeg.

- 1 box Rotini Pasta, 1lb (454g), boiled and drained
- 2 large chicken breasts, cut into cubes
- 2 carrots, sliced to thin rounds
- 1 cup mushrooms, sliced
- 1 medium yellow onion, chopped
- 1/2 sweet cup frozen corn
- 1/2 cup sweet peas
- salt and pepper to taste
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
For the sauce
- 1 tablespoon butter
- 3 cups full fat milk
- 3 cups heavy cream
- 1 cup cheese, Pecorino and Mozzarella
- salt and pepper to taste
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
Instructions
