I literary put it together in five minutes and served it as a side with chicken meatballs.
Cucumbers are available around the year and for some people they can be boring consumed alone unless incorporated in a dish. I personally love cucumbers and eat them as a snack and add them to my sandwiches and salads.
This recipe reminds me of pickled cucumbers and I think if I put it in a jar and seal it, I might actually end up with pickles instead! However, today we are making salad and if there is an easy way to make one, then why not!

Ingredients
This super easy salad recipe calls for 4 simple ingredients
- cucumbers
- red onion
- rice vinegar
- sugar
- green onions, for garnishing

how to make cucumber salad
Start by thinly slicing your cucumbers and place them in a serving bowl
Cut a red onion in half and thinly slide one half and then add it to the cucumbers.
In a small bowl or mixing jar, dissolve the sugar in the cucumber and pour over the salad.
Finally toss the salad a couple of times until everything is well coated with the dressing and finally garnish with some chopped green onions.
This salad is best served chilled.
You can add some heat to this salad by chopping one green jalapeno or more depending on your taste. I avoid adding too much spices to my dishes when I am cooking for my children or I usually make two portions, an adult version and a kids friendly one!

- 1/4 cup rice vinegar
- 2 teaspoons sugar
- 6 small cucumbers, thinly sliced
- 1/2 red onion, thinly sliced
- 1 green onion, chopped
Instructions
- In a small jar or cup, dissolve sugar in vinegar. set aside
- In a salad bowl, arrange the cucumbers and onions. pour the vinegar and sugar mixture and toss a couple of times to cover all.
- Garnish with chopped onions and serve.
