Easy Chicken Stir Fry―easy and delicious chicken stir fry recipe made with cashews, bell peppers, onions and homemade soy and honey sauce.

If you love Asian food, then this recipe is for you. Made with simple every day ingredients and loaded with crunchy vegetables, cashews and cooked in a sweet and salty sauce.

This recipe is so versatile that you can easily substitute chicken with your preferred protein: beef, fish, shrimp, or a combination of them.

We love Asian food, and we often order–in Chinese when craving a good stir fry with some noodles on the side. This recipe will make you change your mind about preparing easy Asian dishes at home that your whole family will enjoy.

Ingredients needed:

You can make this delicious dish with few simple main ingredients:

  • Chicken Breast
  • Onion
  • Red and yellow bell pepper
  • Cashews

For the sauce you will need soy sauce, honey and rice vinegar.

how to make chicken stir fry

Start by cutting the chicken breast into bite size pieces. Season with salt and pepper and coat them with corn starch (corn flour). Chop the onion and dice the bell peppers to similar size pieces and set aside.

In a frying pan over medium high heat, add cooking oil and fry the chicken for 5–6 minutes until fully cooked. I like to use avocado oil for its health benefits, but you can use canola or corn oil.

Remove from oil and place on a kitchen paper towel over a plate to absorb any excess oil.

In a wok or frying pan, heat 1 tablespoon of cooking oil and add cashews and peppers. Stir fry for 3–4 minutes and then add the onions. Stir for a couple of minutes and add the chicken.

Mix the honey with rice vinegar and soy sauce and pour over the chicken and vegetable mix to coat on all sides. Stir for a couple of minutes, turn off the heat and serve immediately.

Serve this stir–fried dish with some steamed rice or noodles, and you will have a wholesome meal for the family.

Ingredients

  • 11/2 lb (0.6kg) boneless, skinless chicken breast
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons corn starch
  • 1 medium red bell–pepper, seeded and cut into pieces
  • 1 medium yellow bell–pepper, seeded and cut into pieces
  • 1/2 cup roasted cashews
  • 1 medium yellow onion
  • 3 stalks scallion, trimmed and cut into 2–inch strips

For the sauce

  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Instructions

Notes

You can replace honey with a tablespoon of sugar.
Do not over cook the vegetables to maintain freshness and a crunchy texture.
