It is not the grilling season now but that does not mean we can not enjoy a good old sizzling rack of lamb chop every now and then.
The idea of cooking lamb chops at home can be intimidating as most of us prefer to grill them in our backyard to avoid oil splashing and smoke in the kitchen.
This lamb chops recipe gives the exact same grilling results without any mess! The chops are baked in the oven at 400F for 20 minutes, and then broiled for 2 minutes making them juicy on the inside and crispy on the outside.
The trick is to place the chops on a wire rack in the oven and turn them halfway through the cooking process so that they cook evenly from all sides .
Finally, though I am not on a keto diet, I know many people are and this recipe is a perfect choice for you.
If you are like me and prefer your chops to be medium cooked but with a lovely crispy crust and a bit of caramelization of the fat on the edges, then follow my simple recipe below.
INGREDIENTS NEEDED:
This easy and quick recipe calls for simple ingredients: lamb chops, seasoning, olive oil, dried mint and coriander seeds.
You may add some dried thyme or rosemary as alternatives. I personally like the combination of dried mint and coriander seeds. They work well with chops.
The olive oil also gives a nice taste to the meat and helps the spices stick and intensify the flavor.
how to cook lamb chops
- Start by preheating oven to 400F (200C).
- Generously season lamb chops with salt and pepper.
- Combine olive oil, dried mint and coriander seeds and brush the chops from both sides.
- Arrange the chops on a wire–rack over a large baking pan and cook for 10 minutes.
- Flip and cook for another 10 minutes.
- Broil for 2–3 minutes to get that lovely crispy crust.
- Cover and rest lamb chops for 5 minutes before serving.
what spices and herbs go well with lamb
Lamb goes well with a variety of spices depending on your preference. Here are some of my favorites:
- Cumin powder: great to combine with crushed garlic, freshly ground pepper and olive oil.
- Moroccan spices particularly Ras el Hanout: this is a combination of different spices widely used in Moroccan food and adds a great flavor to chops and meats in general.
- Dried and fresh mint: a match made in heaven since mint complements the chops fatty and sweet flavor really well.
- Thyme and rosemary: fresh herbs are great with lamb, especially on the grill. I always use a combination of fresh and dried herbs in many of my recipes.

Ingredients
- 12 lamb chops
- 2 teaspoons dried mint
- 2 teaspoons coriander seeds
- 3 tablespoons extra virgin olive oil
- salt and pepper to taste
Instructions
- Preheat oven to 400F (200C) and generously season lamb chops with salt and pepper. Set aside.
- Combine olive oil, dried mint and coriander seeds and brush the chops from both sides.
- Arrange chops on wire–rack over a large baking pan and place in oven for 10 minutes. Then, flip and cook for another 10 minutes.
- Broil for 2–3 minutes to get that lovely crispy crust.
- Remove from oven, cover and let rest for 5 minutes before serving.
