These chocolate chip cupcakes bring a lot of joy and happiness to my children. They love to help frosting and decorating them with sprinkles.
The cupcakes are very versatile and great for birthday parties, play dates and friends’ gatherings.
It takes less than 15 minutes to put the batter together and 20 minutes to bake in the oven. You can make them with simple ingredients and be as creative in decorating them as you like.

This easy cupcake recipe calls for the following.
Dry ingredients: all–purpose flour, unsweetened cocoa powder, baking powder and baking soda, sugar and salt. You will also need chocolate chips—milk or semisweet, both work.
Wet ingredients: Milk, canola oil, eggs and pure vanilla extract.
For the ganache, you will need semisweet chocolate, heavy cream and vanilla extract.

Preheat oven to 350F (180C), line a 12 cupcake pan with parchment paper and set aside.
Sift the flour, cocoa powder, baking powder, baking soda and salt into a medium bowl. Set aside.
In a stand mixer fitted with whisk attachment, or a hand mixer, beat the eggs with sugar and oil until lightened in color (3 minutes). Add vanilla. Stop mixer and scrape the sides of the bowl as needed.
On low speed, add the dry ingredients alternating with milk until you have a smooth batter (2 minutes). Fold in chocolate chips.
Fill each paper with batter, leaving space for the cupcakes to rise, and bake for 20–25 minutes or until an inserted toothpick comes out clean. Remove cupcakes from pan and let cool completely on wire rack.
Use a spatula or a piping bag to spread the ganache over the top of the cupcakes. Decorate with sprinkles or chocolate shavings.

- 1/2 cup canola oil
- 1 teaspoon pure vanilla extract

- 1 tablespoon butter
