One-Pan Baked Halibut with Vegetables

Easy one-pan halibut recipe with cherry tomatoes and green beans that takes 25 minutes to make and baked in a Mediterranean lemon, garlic and thyme sauce.

This colorful dish is very simple yet so delicious to make. It is perfect for a quick week day dinner or even a family and friends’ gathering.

Halibut and vegetables tossed in a zesty citrus sauce with garlic, thyme, olive oil and spices and baked in one pan.. This recipe has all the Mediterranean flavors in it.

I like the addition of coriander seeds to this dish, they just elevate the taste and complement the rest of the ingredients.

Why I Use Wild Alaskan Halibut

Wild Alaskan Halibut is one of my favorite fish to cook. I like its firm delicate texture, and subtle flavor which makes a great candidate for any seafood dish you can imagine, not to mention that it goes great with all sorts of seasonings.

Halibut flavor can be easily enhanced with herbs, sauces, simple citrus additions or even fruit-based salsas.

I prepared a Mediterranean sauce with this dish and a mango based salsa as an alternative.

Lemon garlic and herbs sauce

Ingredients Needed:

To make this recipe you need the following simple ingredients.

For the Mediterranean Sauce you will need: garlic, zest and juice of a lemon, some seasoning, coriander seeds and fresh thyme with a generous amount of extra virgin olive oil.

To prepare the fish you will need: Halibut, fresh green beans and cherry tomatoes on the vines. I used Fresh Wild Alaskan Halibut for this recipe.

How to make one-pan baked Halibut with Vegetables

First, preheat oven to 425F (220C) and prepare a large baking pan approximately 10″ x 14″.

Cut the halibut into 2-inch fillets and pat dry with kitchen paper towel to remove any excess water. Arrange the vegetables and fish in one layer on a large baking sheet.

Mix the sauce ingredients in a jar, close with lid and shake it well. Pour the sauce over the vegetables and fish and coat well.

Finally, place the pan in the oven and bake for 20 minutes. Remove from the oven and serve warm.

What to Serve with Baked Halibut

Halibut is great with any vegetables side dishes like green beans, Garlic Potato, and even cherry tomatoes.

I also made Fresh Mango Salsa which adds a little bit of sweetness and freshness to the dish.

Ingredients

For the sauce:

  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon coriander seeds
  • 2 teaspoons fresh thyme, chopped
  • 1/2 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • zest of 2 lemons
  • juice of 2 lemons

For the fish:

  • 1lb fresh green beans
  • 1lb cherry tomatoes, on the vines
  • 1 1/2lb Wild Alaskan Halibut, cut

Instructions

  1. Preheat oven to 425F (220C).
  2. Arrange the halibut and vegetables in one layer on a large baking sheet.
  3. In a jar, mix together the sauce ingrediengts, shake well and pour over the vegetables and fish. Coat well.
  4. Place the pan in the oven and bake for 20 minutes.
  5. Remove from the oven and serve warm.

    I love this recipe! I made almost the exact dish last evening and it turned out perfectly and very tasteful. Next time I make this (thankfully I bought tons of fresh Halibut in season since I’m East Coast), I’m going to try the coriander seeds. Sounds very interesting.
